George E. Booth was one of only four men to be elected captain of the Miami football team for two consecutive years, serving in that role in 1907 and 1908. As a "roving center" on defense, he played a crucial role in Miami's undefeated 7-0 season in 1908, during which they allowed only one opponent to score.

Some "old-timers" claim that Booth played football at Miami for seven years, but Booth himself clarified that he played every minute of every game for five years. He recalled, "When I wasn't on defense, I handled kickoffs, punts, and almost everything except passing."

Booth played without protective headgear and remembered that pre-game meals on road trips often consisted of "a bushel of ham sandwiches and lots of hot coffee."

In 1958, Booth was recognized as one of Miami's All-Time Gridiron Greats, and he was inducted into the Hall of Fame in 1973.
